Clam and Beer Fritters

Serves  8-10 as a snack Prep Time 10 minutes  | Cook Time 15 minutes

Ingredients

2 cups Flour
1 tsp. Salt
¼ tsp. Pepper
2 Eggs, beaten
2 tsps. Baking powder
¾ cup Beer
2 cans
6 1/2 oz. drained minced clams, with juice reserved
Oil for frying

Instructions

  1. Whisk together beer, eggs and 1/2 cup of reserved clam juice in a small bowl.
  2. In a larger bowl, combine flour, salt, pepper and baking powder.
  3. Whisk in the beer mixture until well combined.
  4. Stir in clams.
  5. Heat about 2 inches of oil in large, deep frying pan to 360°F.
  6. Drop in clam mixture by the tablespoonful and cook for 2 or 3 minutes, turning so that it browns on all sides.
  7. Work in batches and do not overcrowd the pan.
  8. Drain on paper towels and serve with lemon wedges and tartar sauce.

We like to pair shellfish, like clams with a refreshing style beer like a Hefeweizen.
