Hearty Lentil Soup

Serves  6-8 Prep Time 20 minutes  | Cook Time 2.5 hours

Ingredients

1 ½ cups Lentils
1 cup Canned tomatoes
½ cup Diced onions
2 tsp Salt
¼ cup Sliced celery
¼ tsp Pepper
2 tbsps Butter
1 cup Beer
6 cups Water
1 cup Diced potatoes

Instructions

  1. Wash the lentils thoroughly.
  2. Saute the onions and celery in the butter for 10 minutes.
  3. Add the water, tomatoes, salt, pepper and lentils.
  4. Cover loosely and cook over low heat for 2 hours.
  5. Force through a sieve or puree in an electric blender.
  6. Return to the sauce-pan and add the beer and potatoes.
  7. Cook 20 minutes. Taste for seasoning.

This soup is high in protein and easy to make. You can stir in the beer of your choice. We suggest a brown ale.
