Roasted Mickeys with Beer Butter

Serves  6  Prep Time 10 minutes  | Cook Time 1 hour and 15 minutes

Ingredients

½ cup Butter
1 tbsp. Beer
Potatoes
Foil

Instructions

  1. Scrub potatoes with a stiff brush and cut out any large eyes. Leave the skin on or peel.
  2. Wrap each potato in its own jacket of foil and bake on a grill over slow embers for 1 hour.
  3. Melt butter in a small saucepan and stir in beer.
  4. Keep beer butter warm but do not boil.
  5. Serve mickeys with beer butter.

You can also offer your guests a bowl of sour cream and minced chives or green onion. Makes a great cottage snack!
