Salmon Poached in Beer

Serves  4 Prep Time 5 minutes  | Cook Time 15 minutes

Ingredients

1 Small red onion, sliced
3 tbsps. Butter
3 cups Wheat beer
1 ½ lbs. Salmon filet
Salt Lemon wedges, for serving

Instructions

  1. In a large skillet melt butter over medium heat.
  2. Add onion and saute until just softened.
  3. Add beer and bring to a boil.
  4. Reduce to a simmer, add salmon, skin side down.
  5. Sprinkle salmon with salt and cover the pan.
  6. Cook for 6 minutes and then flip salmon skin side up.
  7. Cover and cook for 4 more minutes.
  8. Remove salmon and onions to a platter and serve with lemon wedges.
