Fennel and Melon Slaw

Serves  4  Prep Time 15 minutes

Ingredients

¼ cup Shallots, finely chopped
¼ cup Mint, picked and finely chopped
¼ cup Apple cider vinegar
2 tbsp Honey
Kosher salt and freshly cracked black pepper
1 Asian pear, finely sliced
½ Cucumber, seeded and finely sliced
1 cup Fennel, finely sliced
1 ½ cup Watermelon, cut into small cubes

Instructions

  1. Whisk together the shallots, mint, vinegar and honey in a medium bowl. Season with salt and pepper.
  2. Add pear, cucumber, fennel and watermelon and toss well.

Suggested Pairings:  A refreshing style wheat beer or Hefeweizen pairs great with this fennel and melon slaw. Or find commonalities in flavour by trying it with a seasonal fruity style.
